It pays to have a plan. Stash your ice cream maker bowl in the freezer the night before you plan on making this Keto ice cream sandwiches recipe.

Prepare Early

Keto can take a little extra thought, but I think that’s why the results are so positive. We get so used to eating mindlessly that we don’t think about what we’re putting in our bodies.

Once you start on Keto, you become acutely aware of just how much sugar is in everything. Even and especially in places you don’t expect to find it.

While many Keto-friendly foods require a little preparation, the end result is worth it. In the case of these ice cream sandwiches, you need to make sure your equipment is ready for battle.

That means putting your ice cream maker bowl in the freezer ahead of time. While some of you may have enough freezer space that your bowl can take up permanent residence there, others probably leave it out.

You’re also going to need coconut cream for the ice cream. This may mean refrigerating a can of coconut milk until some of it hardens.

If you have a full can of coconut cream (sometimes it’s sold this way), you could skip this step, but you will also need coconut milk for the recipe.

Things You’ll Need

Since this recipe is really two recipes in one, I thought it would be handy to list out all the ingredients. Nothing is worse than starting a recipe and realizing you’re missing something. Except maybe when you realize that all the stores are closed.

Before you begin, make sure you have the following:

  • Almond flour
  • Coconut flour
  • Baking powder
  • Unsweetened cacao powder
  • Erythritol
  • Stevia
  • Flaxmeal
  • Chocolate chips (e.g., Lily’s)
  • 5 eggs
  • Coconut oil
  • Coconut cream (from the top of 1 can of refrigerated coconut milk)
  • Coconut milk
  • Vanilla extract
  • Vanilla paste (optional)

How I Made This Keto

The ingredients list should give you some clues as to how I pulled this off, but let me begin by stressing how not Keto regular ice cream sandwiches are.

Your average store-bought ice cream sandwich could contain anywhere between 25 and 30 grams of carbs! Ouch!

I was confident I could do better than that. For the cookies, I eliminated white flour and swapped it for coconut and almond flour.

Instead of sugar, both recipes use erythritol, and the ice cream is best with a touch of Stevia. Coconut cream is a handy way to replace dairy, and I used cacao powder for the cookies.
