30 Tastebud-Tingling Keto Ice Cream Recipes https://ketosummit.com/keto-ice-cream-recipes

Ice cream is the perfect summertime treat.

I often find myself craving something sweet and refreshing when the weather gets hot and I’m sure plenty of other keto folks do too. But store-bought ice cream is loaded with sugar and dairy, so you can’t just grab a pint at your local store.

That’s why we’ve made a list of Ketogenic ice cream recipes – there are colorful fruit creamsicles for the big kids, a grown-up chocolate gelato and even kombucha popsicles for the adventurous eaters. Of course, there are classic favorites like mint choc chip and vanilla too!

A few things to watch out for when making your own Keto ice cream:

  1. Some of the recipes use “dark chocolate.” Use 100% chocolate to avoid all sugars.
  2. Don’t overeat. These recipes are healthier and low-carb friendly, but they do still have some carbs. Even 100% dark chocolate contains net carbs. And some of the recipes use berries or coconut cream, which also contain some net carbs.
  3. Use an ice cream maker if you can. This will make your life so much easier (otherwise you’ll have to keep going to the freezer to stir it so it doesn’t form into a big block of ice).
  4. Use a sweetener like stevia to add a touch of sweetness to your ice creams.

It’s easier to make than you think to make your own Keto ice cream at home and I’d recommend making a big batch. That way, you’ll have some on hand when guests come over or you’d just like to treat yourself!

To see just how easy it is check out this video:

Here are just a few of the Ketogenic Ice Cream Recipes we’ve included:

Mint ice cream is the perfect way to get cool on a hot day! This recipe is better suited to an ice cream maker if you have one, but don’t fret if not. You can still make it in the freezer, but you do have to stir it every 15 minutes or so and sadly, it won’t end up as creamy using that method.

Who could resist frozen custard ice cream? This unique recipe from Lisa at Low Carb Yum is definitely one you have to try at least once. This is another recipe which will yield better results if you have access to an ice cream maker.

Not familiar with monk fruit?  Dr.  Amy Myers, M.D. explains, “Monk fruit…derives its sweetness from the natural antioxidants in the fruit. It has a glycemic index of zero and can be used as a 1:1 substitute for sugar.”

Mint Ice Cream

– Paleomazing

Ingredients: almond milk, avocados, Erythritol, peppermint extract.

What could be nicer on a hot day than a bowl of mint ice cream? Guaranteed to cool you down, and with the mint extract it has a wonderfully fresh taste. You can even recreate the green ‘color’ by adding the mint leaves, meaning there are no artificial additives here. The chips made from carob are a great substitute for chocolate if you decide to add these, but they are not essential.

Ingredients: full-fat coconut milk, mint, liquid Stevia, avocados, salt, unsweetened cacao nibs.

Please don’t panic about using the avocado in this recipe – you won’t be able to taste it and it just lends a fabulous creaminess to the texture! Homemade ice cream can be made to suit your own palate, so taste it before freezing and that gives you the chance to adjust the amount of sweetener you need. It also guarantees that your dessert has no hidden ‘nasties’!

This is a good basic recipe for vanilla ice cream if you don’t have an ice cream maker. It allows you to make delicious ice cream which you can add different ingredients to if required. You could also add a Keto sauce to go with it. Again, it is a good idea to taste the mixture before freezing so that you can adjust the amount of sweetener.

Mint Chocolate Chip Ice Cream

– Keto Diet App

Ingredients: avocados, coconut milk, Erythritol, Stevia extract, vanilla extract, fresh mint, mint extract, dark chocolate chips.

What could be better on a hot summer day than a bowl refreshing mint/choc ice cream to cool you? Homemade ice cream is amazing because you are totally in charge of what goes into it, meaning you can rest easy that the family are eating only good things. If you prefer just a hint of mint, then don’t add the fresh mint, just adjust the amount of extract you use.

Ingredients: coconut oil, almond milk, MCT oil, organic eggs, organic egg yolks, vanilla bean, Erythritol, Stevia Glycerite (optional), unsweetened cocoa powder, sea salt.

The ice cream in this recipe is rich and full of flavor, making it a great dessert option for the whole family. It is a good idea when adding the sweetener to taste the mix often so you don’t over-sweeten. It is unusual to have salt in a sweet recipe, but it actually sets off the flavor of the chocolate really well.

Vanilla Coconut Milk Ice Cream

– The Nourishing Gourmet

Ingredients: full fat coconut milk, sweetener of choice (preferably Stevia), vanilla extract.

You couldn’t possibly imagine an easier ice cream recipe than this one – only three ingredients! You can rustle up a batch of this in seconds and transform it in your ice cream maker to give a soft-serve option to accompany any dessert. You could even add this to your favorite iced tea for a fabulous float, a great idea if people drop in for a visit.

Keto Ice Cream Recipe

– Yummy Inspirations

Ingredients: milk of choice, cream (almond, cashew, or coconut milk), sweetener of choice (preferably Stevia), salt, vanilla extract.

This Keto recipe gives you a fabulous basic vanilla ice cream that tastes just as good as the dairy-based one. But this recipe doesn’t have any of the nasty ingredients found in some store-bought ice creams. To this dish you could add other Keto ingredients you like, like chopped nuts, cacao nibs, or vanilla extract, or just serve it as it is! If you are giving a dinner party you could even add a little alcohol, which gives you a softer set and avoids the ice cream turning rock-hard in the freezer.

Blueberry Coconut Soft Serve

– Mama Loves Food

Ingredients: coconut milk, blueberries.

Here is the perfect recipe for a sweet summery treat if you have friends or family dropping in unexpectedly! Keep a bag of frozen blueberries in the freezer and you can make up this delicious fruity snack in seconds. Other frozen fruit could be used instead to give you a variety of flavors.
