Ingredients
- 2 lbs (900 g) smoked boneless gammon (raw pork leg that’s used to make ham)
- 1 onion, peeled and roughly chopped
- 1 celery stalk, roughly chopped
- 2 garlic cloves, peeled and bashed
- 2 teaspoons black peppercorns
- 1 teaspoon whole cloves
- 1/2 whole cinnamon stick
- 1/4 whole nutmeg
- 1/4 cup salt
Instructions
- Add all the ingredients to a large pot and cover with cold water. Bring the water to a boil, and use a spoon to skim off any foam on top.
- Turn down the heat to a simmer and half cover with a lid. Make sure the water doesn’t evaporate too quickly.
- Simmer for an hour and a half. Remove the pot from the stove and let the ham cool in the liquid for an hour. Remove from the liquid and refrigerate for up to 1 week.
