I recommend using chicken broth as it sets off the flavors really well, but any broth would do. This soup freezes well so no excuse for not having a supply right through the winter!

If you’re under the weather the herbs and spices in this soup may just help you feel better. For example, Dr. Andrew Weil, M.D. says, “I think thyme can play an important role in treating mild health concerns. It can help to suppress coughs, and is a good antifungal.”
