Description

Bite-sized balls of lemon meringue


Ingredients

  • 4 egg yolks, whisked
  • 2 lemons, juice and zest
  • 1/2 cup (120 ml) water
  • 1/2 cup erythritol + stevia
  • 2 Tablespoons (30 ml) coconut oil
  • 1/2 cup (120 ml) coconut cream
  • Dash of salt

Instructions

  1. Add the lemon juice and zest to a small pan with the 1/2 cup of water.
  2. Whisk together the egg yolks and sweetener and add to the pan on medium heat.  Stir for a few minutes until it starts to thicken.
  3. Remove from the heat and pour through a sieve into a mixing bowl.  Stir in the coconut oil, cream, and dash of salt.
  4. Pour into silicone molds or ice cube trays.
  5. Freeze for 8+ hours.
