Description
These little rolls are packed with flavor and the perfect accompaniment to your dinner.
Ingredients
- 1/3 cup (2.5 oz or 70 g) coconut flour
- 1/4 cup (1 oz or 30 g) almond flour
- 1/4 cup (0.9 oz or 25 g) psyllium husk powder
- 1 teaspoon (2 g) baking powder
- 1 teaspoon (4 g) baking soda
- Dash of garlic powder
- Dash of salt
- 4 large eggs
- 2 teaspoons (10 ml) olive oil
- 1/4 cup (60 ml) water
- 1/4 cup (60 ml) ghee
Instructions
- Preheat the oven to 350 F (175 C).
- Combine the coconut flour, almond flour, psyllium husk powder, baking powder, baking soda, garlic powder, and salt in a large bowl.
- In a separate bowl, whisk the eggs, olive oil and water together. Once the melted ghee has cooled a little, whisk this in too. Add the egg mixture to the flour mixture and combine well. Leave to settle for 5 minutes until the mixture firms up a little.
- Form 9 equal-sized balls with the mixture and place on a small tray lined with parchment paper.
- Bake in the oven for 25-30 minutes, reducing the temperature to 300 F (150 C) in the last 10 minutes. Leave to cool on a rack and store in a sealed container.
