Description

These soft Keto muffins are packed full of coconut and lime flavor.


Ingredients

For the muffins:

For the glaze:

  • 2 Tablespoons (30 ml) coconut cream
  • 1 Tablespoon (15 ml) lime juice
  • 1 Tablespoon (12 g) erythritol

Instructions

  1. Preheat oven to 350 F (175 C).
  2. Combine all the muffin ingredients. Mix well.
  3. Line a muffin pan with muffin liners or grease well.
  4. Spoon the mixture into the muffin pan (to around 3/4 full) and level out with a spoon.
  5. Bake for 15 minutes until a toothpick comes out clean when you insert it into a muffin.
  6. To make the glaze, mix all the glaze ingredients together. Drizzle or spread over the cooled muffins.
