Keto Glazed Coconut Lime Muffins Recipe
I can be such a sucker for a good muffin. They are pretty much my favorite food to start off and end a day with. And, they were one of the first things that I needed to find a Keto replacement for when I started the diet. Because once and a while I need a muffin for breakfast.
For once, I wanted to create a muffin that was a little less breakfast focused and more of a dessert. As if you cannot tell already, coconut is one of my favorite ingredients for just about anything. Add a splash of citrus, and we have these fantastic Keto glazed coconut lime muffins.
Create a Full on Coconut Lime Explosion
These muffins are fantastic because they are full of flavor. The added coconut flour helps to accentuate everything this recipe is about. But, I take it even further with coconut cream, oil, and of course, lime juice.
But, that just wasn’t enough for these exquisite sweet treats. So, I thought we needed to glaze them in coconut cream and just a bit more lime to take them over the edge.
Have Fun With Baking
Baking can seem a little complex. I mean, there is a lot that could go wrong. However, it doesn’t have to be so intimidating. There is something that makes baking super easy, the recipe is all laid out and measured for you. As opposed to cooking which can be a little off, baking recipes almost always go as they should.
So, relax, pull out those measuring cups and follow the directions. This should be a fun experience with a joyful conclusion – you get some delicious muffins to eat.
It Doesn’t Need to Be Lime
As much as I love the combination of lime and coconut, I know that it is not always every ones first choice. Thankfully, this recipe is open to some playing around with. Here are a few flavors that you can replace the lime with:
- Orange
- Lemon
- Vanilla
- Blackberry
- Strawberry

These soft Keto muffins are packed full of coconut and lime flavor.
Ingredients
For the muffins:
For the glaze:
- 2 Tablespoons (30 ml) coconut cream
- 1 Tablespoon (15 ml) lime juice
- 1 Tablespoon (12 g) erythritol
Instructions
- Preheat oven to 350 F (175 C).
- Combine all the muffin ingredients. Mix well.
- Line a muffin pan with muffin liners or grease well.
- Spoon the mixture into the muffin pan (to around 3/4 full) and level out with a spoon.
- Bake for 15 minutes until a toothpick comes out clean when you insert it into a muffin.
- To make the glaze, mix all the glaze ingredients together. Drizzle or spread over the cooled muffins.
