Avocado adds a creaminess to this cookie you have to try.
Ingredients
- 1 ripe avocado, mashed
- 1/4 cup (48 g) erythritol + stevia, to taste
- 1 egg, whisked
- 1 teaspoon (5 ml) vanilla extract
- 1/2 cup (48 g) cacao powder
- 1/2 cup (60 g) almond flour
- Dash of baking soda
- Dash of salt
- 1/4 cup (32 g) macadamia nuts, crushed into large pieces
Instructions
- Preheat oven to 350 F (175 C).
- Mix everything together in a bowl.
- Place a piece of parchment paper on a baking tray. Scoop small balls of dough onto the baking tray (makes approx. 15).
- Bake for 8-10 minutes until the top is crisp. Top with additional pieces of macadamia nuts and sprinkle with sea salt.
