The breakfast casserole is a thing of beauty. It can serve one with leftovers or a big brunch crowd without breaking a sweat and, it can be served for almost any meal, breakfast, lunch, or dinner. That’s a good thing because you’ll want to eat this Keto chicken and bacon casserole all day long! It starts with the base, sliced chicken breast and crispy bacon. To that, in goes a healthy serving of grated carrots and flavorful thyme. Then, to top it all off, a rich and silky custard made with fresh eggs and coconut cream. Morning, noon or night, this casserole is sure to be a hit!

Three Tips for Casserole Success

  1. Always start with cooked meat – Though this casserole is baked in the oven, it’s best to start with pre-cooked meats because it makes cooking the casserole a breeze and browning the meat is another opportunity for flavor. As an added bonus, this is a great way to use up any leftover chicken or even turkey from dinner the night before.
  2. Moisture is not your friend – You may notice that the recipe says to squeeze excess water of your carrots. It may be tempting to skip this step if you’re in a rush but it’s actually very important. The ratio of coconut cream to eggs yields a perfect creamy custard. Any extra moisture from the carrots runs the risk of turning your casserole soggy. Make sure to keep this in mind for any substitutions.
  3. Oven alternatives – Craving a casserole but can use your oven? One option is to cook it on the stove-top like a frittata (see here for instructions) but there is an easier way. You can actually make breakfast casseroles in the crockpot. Check out one low-carb example here (contains dairy).

Storing and Enjoying Leftovers

Leftovers are one of the best parts of a casserole, read on for a few tips on how to make the most of your breakfast casserole on day two.

  • Baked casserole can be stored in the fridge for up to five days and in the freezer for up to two months.
  • Unless you’re planning on serving a crowd, freezing individual slices is a good option for convenience.
  • Leftover casserole can be enjoyed as an easy breakfast sandwich on a slice of Keto bread.
