Always start with cooked meat – Though this casserole is baked in the oven, it’s best to start with pre-cooked meats because it makes cooking the casserole a breeze and browning the meat is another opportunity for flavor. Description

Bacon and eggs meets classic chicken casserole.


Ingredients

  • 2 chicken breasts, diced
  • 4 slices of bacon, diced
  • 2 Tablespoons (30 ml) coconut oil, to cook the chicken and bacon with
  • 2 carrots, grated (squeeze excess water out)
  • 6 eggs
  • 2 cups (480 ml) coconut cream
  • 2 Tablespoons thyme, chopped
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 350 F (175 C).
  2. Add coconut oil to a frying pan and brown the diced bacon and chicken.
  3. Fill a large casserole dish with the bacon, chicken, carrots, and thyme and season with some salt and pepper.
  4. In a bowl, whisk the eggs and coconut cream together.
  5. Pour the egg mixture over the chicken mixture.
  6. Bake in the oven for 35-40 minutes.
