I am going to be honest here, I don’t know what the big deal about rice is. I understand that it is a cheap and easy carb. But, it is so flavorless and doesn’t add any depth to recipes. It’s basically just a filler, and it was one of the easiest things to give up for the Keto diet.

Cauliflower rice, however, is even easier to make, better for you, and actually has some taste to it. To get it ready just take the flowers and add them to a food processor. Blend it up until it is a small consistent size, emulating rice. Then, all you have to do is fry it up in a pan for a few minutes. A bit of water may help the cauliflower to soften more quickly.

What Is Adobo All About?

Adobo is a simple idea. It is about marinating protein in and frying it up quickly. The balance of sweet, sour, and savory make it a dish that bursts with taste. Ingredients

For the chicken adobo

For the cauliflower rice

  • 1/2 head of cauliflower, processed into rice-like pieces
  • 1/4 cup of coconut oil (60 ml), to cook with

Instructions

  1. Add the avocado oil into a large frying pan.  Add the chopped chicken breast, onion, and garlic.  Saute until the chicken is cooked.
  2. Add in the tamari sauce and apple cider vinegar and place a lid on the pan.  Simmer for 10 minutes. Spoon the sauce over the chicken periodically.
  3. To make the cauliflower rice, sauté the cauliflower pieces in the coconut oil on high heat for 5 minutes until softened.
  4. Serve the chicken adobo on top of the cauliflower rice.
