Keto Carrot Chili Recipe

Ingredients

  • 2 Tablespoons (30 ml) avocado oil, to cook with
  • 1.5 lb (675 g) ground beef
  • 4 slices of bacon, diced
  • 1/2 onion, diced
  • 2 carrots, shredded
  • 2 tomatoes, diced
  • 1/4 cup (60 ml) water
  • 2 cloves of garlic, finely diced or minced
  • 1/4 cup cilantro, chopped
  • Salt and pepper, to taste

Instructions

  1. Add avocado oil to a large pot and brown the ground beef and bacon on high heat.  Then add in the onion and let it brown for a few minutes as well.
  2. Add in the tomatoes and carrots and water.
  3. Season lightly with salt.
  4. Simmer with the lid on for 60 minutes, stirring often to make sure it doesn’t burn on the bottom.
  5. Add in the garlic and cilantro and cook for 5 minutes.
  6. Season with additional salt and pepper, to taste.
