Why Are They Called Buffalo Wings?

First things first here – how did these wings get their name, when they are definitely not made of buffalo?

The answer is geographic. Buffalo wings were first served in an establishment known as the Anchor Bar, which is located in Buffalo, New York.

There are various versions of how the popular wing creation came to be, but it seems the bar received a shipment of wings by mistake, and a woman named Teressa Bellissimo designed a special sauce for them.

The wings were ushered out with blue cheese and celery, which is what she had handy. The supporting cast stuck, and you’d be hard-pressed to find wings that don’t come with crunchy cool celery.

Buffalo Wings vs. Hot Wings

Now that you know where these wings got their unique name, you may be wondering what, if anything, differentiates them from hot wings.

As you can see from this Keto recipe, Buffalo wings contain hot sauce. Hot wings often have chili peppers in the sauce, which can really dial up the heat.

Buffalo sauce, on the other hand, is milder. It typically contains hot sauce, but there are other ingredients such as butter that dial down the heat.

You can adjust the temperature in this recipe as well. If you like things super spicy, add more hot sauce, cayenne pepper, and/or crushed red pepper flakes.

Better have some celery handy to put out the fire though!

A Better Butter

This Keto Buffalo wings recipe suggests a different kind of butter, called ghee. This clarified butter is nearly free of milk sugars and proteins.

That means that most people can tolerate it, unlike dairy.

And ghee has another magical quality – it somehow manages to taste even more buttery than butter itself!

It’s a great alternative to butter that has a lot of applications.

  1. Preheat oven to 400 F (200 C) and grease a baking tray. 
  2. Mix the dry ingredients together in a bowl.  Drop the chicken wings into the dry mixture. 
  3. Mix together the ghee and hot sauce together in a separate bowl.
  4. Dip each chicken wing into the ghee and hot sauce mixture and place onto the baking tray. 
  5. Bake for 45 minutes.
