Get excited, my keto friends – muffins are back…low carb, sugar-free, and dairy-free! If you’ve been craving these sweet treats, you’re in luck. AND this keto blueberry muffins recipe is so easy to make.

Fruity muffins are so yummy, so why not try our apple cinnamon muffin recipe?

How to Make Low Carb Keto Muffins

Muffins don’t exactly jump to the top of keto diet food lists. But that doesn’t mean they can’t be enjoyed in moderation, with a few modifications.

If you’ve done any baking while on a keto diet, you can probably guess some of the ingredients that will need to be replaced. Sugar, all-purpose flour, butter and vegetable oil were kept off the ingredient list of our keto blueberry muffins.

In this keto blueberry muffins recipe, sugar is replaced with a bit of vanilla extract and stevia. All-purpose flour steps aside to let almond flour shine.

Butter is replaced with ghee, a better option for those with sensitivity to dairy. You can also use coconut oil instead of ghee if you prefer to omit ghee as well from your Keto diet.

The result is a delicious muffin with just the right amount of sweetness.

How to Bake the Best Muffins

These muffins are pretty simple, but there are some tricks you can try to ensure a better batch.

  • Either grease your muffin tin with coconut oil or ghee, or use muffins liners.
  • Don’t overfill your muffins. They should be three-quarters full at the very most.
  • Fill any empty muffin compartments with a small amount of water. This will help ensure even heat distribution throughout the pan.
  • To test for doneness, pierce one of the central muffins with a toothpick. It will come out clean if the muffins are ready. If you pull up a bunch of goo stuck on the toothpick, send the Keto muffins back for a bit more oven time.
  • Let the muffins hang out in the pan for 10 minutes or so after they come out of the oven.

Not everyone in the house will be happy to go keto with their baked treats, so here’s a more typical blueberry muffin recipe.
