Keto Berry “Frozen Yogurt” Recipe

Ingredients

  • 1 cup (70 g) mixed berries
  • 1 cup (240 ml) coconut cream
  • 1 teaspoon (5 ml) vanilla extract
  • Zest and juice of ½ lemon
  • 2 Tablespoons (24 g) erythritol or stevia, to taste

Instructions

  1. Mix together the vanilla, coconut cream, lemon, erythritol or stevia and freeze for 30 minutes.
  2. Food process or blend the frozen coconut cream mix and berries (for a few pulses). Divide between 6 small containers/glasses.
  3. Place back into the freezer and freeze for a few hours. You may need to thaw it a bit before serving.
  4. This snack will keep in the freezer for up to 3 weeks.
