As this Washington Post article suggests, part of the reason why avocado toast became so popular is because it’s so Instagrammable. Over 100,000 posts have the hashtag #avocadotoast. It just looks so good!
Its popularity probably also has to do with how easy it is to make and how fun it is to customize. For this recipe, we’ve added in crunchy crushed pistachios as well as chopped tomatoes for a splash of red.

Dice up some of the tomatoes – you don’t need very much. Cut open a ripe avocado – scoop out the avocado halves. Squeeze a bit of lime over the avocado halves. You’ll also need some sea salt, extra virgin olive oil, and pistachios for this recipe.
And for the bread, you can use this Paleo or Keto bread recipe here or for a faster option, use this microwave bread recipe here.
Step 1:
Toast the bread and scoop out the avocado halves and place each half on top of each slice of toast.

Step 2:
Smash the avocado halves on the bread. Don’t do it too hard or the bread will tear. If you prefer, you can mash the avocado in a bowl and them spread on top of the toast.
Then sprinkle the diced tomatoes and crushed pistachios on top of the smashed avocado.

Step 3:
Drizzle extra virgin olive oil on top and sprinkle the sea salt over the top of the avocado toast.
