Dice up some of the tomatoes – you don’t need very much. Cut open a ripe avocado – scoop out the avocado halves. Squeeze a bit of lime over the avocado halves. You’ll also need some sea salt, extra virgin olive oil, and pistachios for this recipe.

Step 1:

Toast the bread and scoop out the avocado halves and place each half on top of each slice of toast.

Step 2:

Smash the avocado halves on the bread. Don’t do it too hard or the bread will tear. If you prefer, you can mash the avocado in a bowl and them spread on top of the toast.

Then sprinkle the diced tomatoes and crushed pistachios on top of the smashed avocado.

Step 3:
