This keto 4-ingredient almond butter muffins recipe is bursting with nutty flavor.
Ingredients
- 1 cup (240 ml) almond butter, warmed slightly (including the oil in the almond butter jar)
- 3 eggs, whisked
- 1/4 cup (48 g) erythritol
- 1/2 teaspoon (1 g) baking powder
Instructions
- Preheat oven to 350 F (175 C).
- Mix together all the ingredients in a large mixing bowl to form a batter. If the batter is too thick, add in a bit of coconut oil or ghee. Use a hand whisk to mix it all together well.
- Pour into muffin pans (use silicone muffin pans or grease the metal pans). Makes 6 muffins.
- Bake for 16-18 minutes until a toothpick comes out clean when you insert it into a muffin.
