Creamy Keto Cucumber Salad Recipe [5-Min Recipe]
I get so bored of just eating meat and eggs and more meat on a ketogenic diet. (Even if they are cooked in delicious fats!)
That’s why we highly encourage you to eat more vegetables. Of course, you have to stick to low carb vegetables, but there are some great ones to choose from.
And cucumbers are one of them. Cue our keto cucumber salad recipe!
Another great side salad recipe is this keto Waldorf salad.
How to make a creamy cucumber salad
It’s easy to make this recipe. Start by peeling your cucumber. Half the cucumber lengthwise. Then chop it into thin (but not paper-thin) slices. Place into a small bowl.
(Note – if you can refrigerate your cucumber to chill it first then this salad will taste even better.)
Next, add mayo and lemon juice.
Mix it all together well, add some ground pepper and salt and serve immediately.
What to serve keto cucumber salads with
Because cucumber salads are light and refreshing, they’re great for summer months or barbecues. They’re also perfect as a quick side dish for lunch.
My favorite option is to serve this keto cucumber salad recipe with a frittata for a super fast and easy ketogenic meal. It also goes great with drier meats as the creaminess of this salad helps to add extra fat and moisture to the meat.
Here are a few recipes you can serve this quick cucumber salad with:
If you shred your cucumber more thinly, you could try making your own cucumber coleslaw and use it as a dip for your next party buffet.
