With a few extra helping hands, the process of forming and frying these patties will go by in a flash.

Four Things You May Not Have Known About Zucchini

  1. The zucchini was introduced to the United States in the 1920s by Italian immigrants. In fact, the name “zucchini” comes from the Italian work zucca, which means “squash.”
  2. The world’s heaviest zucchini was grown in the UK in 1990. It was more than five feet long and weighed 65 lbs. The world’s longest zucchini was over 8 feet long and grown by an Italian man in Canada in 2014.
  3. When it comes to flavor, smaller is better with zucchini. For the best flavor aim for a zucchini that is no longer than 7 inches, about the size of an average flashlight. Also look for zucchinis that still have a chunk of their stem attached as those will last longer than those which do not.
  4. When it comes to zucchini, don’t be afraid to judge the “book” by its cover, or at least its color. The more vibrant the color of a zucchini, the better it will taste.

Serving Suggestions for Your Zucchini Patties

These bacon zucchini patties are very versatile, read on for just a few serving suggestions to get you started.

  • Serve hot out of the pan with Greek-style coconut (or other non-dairy) yogurt. To make your own Greek-style yogurt, line a strainer with cheesecloth. Put the yogurt in the lined strainer, place over a large bowl, and leave to drain in the fridge for 4-8 hours. The longer you drain it, the thicker your yogurt will get. The liquid that drains out can be used in smoothies.
  • Serve with a creamy sauce such as Keto garlic dip or Keto faux French onion dip.
  • Serve with a “starch” like cauliflower rice for a tasty veggie-packed meal.
  • For an impressive and healthy brunch option, serve topped with a poached egg and hollandaise sauce.
